Even those of us who do not have a great love for chocolate know that belgian chocolate is some of the very best. Just the term belgian chocolate implies that the chocolate is made not only from the highest quality ingredients, but also using the best techniques available, many of them that have been used for over a century. Even in the world of european chocolate, belgian chocolate stand out and sets standards of quality.

It was in Belgium that much of chocolate's modern history has played out. From the minds of very dedicated confectioners came ideas that made belgian chocolates truly unique and inventions that made chocolate more readily available to the public. We can thank Belgium for the invention of the first pralines, with their shiny, snappy outside and delectable and delicate fillings. Before pralines, there was no such thing as a small piece of belgian chocolate that you could pop into your mouth when the mood hit you. SInce the pralines were more delicate than any other chocolate product before that , even new packaging had to be invented. And the ballotin des pralines is still the box of choice for packing belgian chocolate pralines.

The Belgians still take extra steps that make their products stand out from the crowd. Even though most chocolate manufacturers now get their chocolate in solid form and then have to reheat it to make their confections, Belgian does no such thing. Belgian chocolates are made from chocolate that has never cooled until the final product and that causes the chocolate to retain much more of its aroma and taste. All of these small, and often times unknown, differences really add up to a final product that cannot be compared to most other chocolates.
